Asahi Shuzo began in 1830 as 'Kubota-ya' in the Koshiji area of Nagaoka, where soft local water shapes its style. In 1985 it launched Kubota, the clean, dry sake that opened the tanrei-karakuchi era and carried Niigata brewing to national fame. The brewery uses Niigata-grown rice exclusively — over 60% from contract farmers — and has run its own rice research institute since 1990. Its grounds even hold Shoraikaku, a nationally designated Important Cultural Property.
