A Minamiuonuma brewery growing its own proprietary rice from seed to milling.
Takachiyo Shuzo was founded in 1868 in Minamiuonuma, Niigata, its name a wish from the founder that "the many may flourish for a thousand, eight thousand generations." Brewing water comes from spring water flowing down Mt. Makihata, one of the softest waters in the prefecture, and the kura pursues sake that lets that natural character show through. Takachiyo manages everything in-house, from growing the seed of its proprietary Ipponjime rice variety to milling its own grain -- a "brewing with a visible face" approach.
