Minamiuonuma's oldest sake house, its flagship named three centuries ago by the author of a famous snow-country chronicle.
Founded in 1717 in Shiozawa, Aoki Shuzo is the oldest brewery in the Minamiuonuma region, now run by its twelfth generation. It draws soft spring water from roughly 80 meters beneath Mt. Makihata and rice grown locally, brewing by hand in the traditional style of the Echigo toji. Its flagship label, Kakurei — meaning 'crane's age,' a symbol of longevity — was named by Suzuki Bokushi, the Edo-period author of Hokuetsu Seppu, a celebrated chronicle of snow-country life.
