Snow-country brewing at the foot of sacred Mt. Hakkai, with spring water piped 4.2 km to the kura.
Founded in 1922 in Minamiuonuma — Niigata's legendary snow country — Hakkaisan brews beneath Mt. Hakkai under a simple creed: good sake, for everyone. Its brewing water, the Raiden spring, travels 4.2 km by conduit from the mountain, and in 1983 the brewery completed Japan's first underground storage tanks for slow, cold maturation. Today Hakkaisan is a house of fermentation in the widest sense, making beer, whisky and koji amazake alongside its famously clean sake.
