Ishimoto Shuzo was founded in 1907 in Kameda, on the outskirts of Niigata city, out of founder Ishimoto Ryuzo's simple wish to please the farmers who worked the surrounding fields. During and after the war, when much of the industry turned to heavily adulterated 'triple-brewed' sake to stretch supplies, Ishimoto kept to honest brewing methods. That stance made Koshinokanbai an early standard-bearer for tanrei karakuchi — Niigata's clean, dry style — and helped ignite the nationwide jizake (local sake) boom of the 1970s.
