The Shibata brewery that put unpasteurized sake in a can and turned Japan onto nama genshu.
Kikusui Sake has brewed in Shibata since 1881, under a creed of respecting the earth and brewing with a good conscience. It became a pioneer of nama genshu — unpasteurized, undiluted sake — launching Funaguchi Kikusui Ichibanshibori, Japan's first premium canned nama genshu, a product that introduced the country to fresh, unfiltered sake in an entirely new format. The brewery now runs KIKUSUI Kura Garden, a visitor space built around the deeper pleasures of fermentation, with tours available for a small fee.
