A Nagaoka brewery that spent three years reviving an extinct rice -- and inspired a manga.
Kusumi Shuzo was founded in 1833 in the former village of Washima, now part of Nagaoka, Niigata. Its guiding belief is that sake is "a breeze brewed from local rice, water, people and nature," and the kura still mills all its own rice and hand-crafts each batch using koji trays and wooden steaming vats. Starting in 1980, over three years, Kusumi revived Kamenoo, a legendary sake rice that had gone extinct after the war -- a story that became the basis for the manga Natsuko no Sake.
