A Joetsu brewery that swims against Niigata's dry-sake current, coaxing gentle sweetness from ultra-soft mountain water.
Founded in 1897 in Joetsu, Maruyama Shuzojo draws its brewing water from an ultra-soft well fed by the hill behind the kura — among the softest water used in Japanese sake. The brewery keeps to hand-made koji, using the traditional futamiji (lidded-tray) and hakomouji (box) methods over some 46 hours of work. Where most Niigata sake chases a bone-dry style, Maruyama pursues tanrei umakuchi — light-bodied but gently sweet — extracting a natural sweetness that has won gold medals at the Feminalise World Wine Competition in both 2020 and 2021.
