An Uonuma brewery that shuns its own website, selling only through trusted retailers and one of Japan's rarest rice varieties.
Founded in 1884 in the snowbound town of Koide, now part of Uonuma, Midorikawa Shuzou brews entirely with Niigata-grown rice and water drawn from roughly 50 meters underground on the brewery grounds. Its main rice is Hokuriku No. 12, a scarce variety used by only two breweries in Japan. True to an unusual philosophy, Midorikawa runs no official website and sells no sake by mail order, distributing instead only through a fixed network of authorized retailers, tracking each bottle by a QR code on its base.
Junmai — about 15-16% alcohol, dry and clean
Futsushu — finished with mochi rice late in brewing, suited to warming, about 15-16% alcohol
Ginjo — about 16-17% alcohol
