Two centuries of 'quality first' in Murakami, milling its own rice and drawing spring water off the Asahi range.
Miyao Shuzo has brewed in the castle town of Murakami since 1819, guided by a code of conduct the second-generation owner, Miyao Matakichi, laid down: quality first, always. The brewery mills all its own rice in-house, controlling the polish by hand, and draws softly sweet spring water from an on-site well fed by the Asahi mountain range. Working mainly with Niigata's Gohyakumangoku rice, Miyao aims for the tanrei umakuchi style — light-bodied yet quietly rich — checking every batch by taste multiple times before release from one of the prefecture's largest cold-storage warehouses.
