A Nagaoka brewery named for a warlord's youth, brewing crisp, food-friendly sake from a nationally famous spring.
Morohashi Shuzo was founded in 1847 in Tochio, a heavy-snow district of old Echigo where the young Uesugi Kenshin — then still called Nagao Kagetora — spent his formative years; the brewery took his childhood name for its label, Koshi no Kagetora. Guided by a family motto to 'brew sake that suits your means,' the kura keeps production almost entirely by hand, aiming for a clean, dry style that never overwhelms the food on the table. Brewing water comes from the nationally celebrated Toto no Mori spring and an ultra-soft well, and some releases are aged in a natural cave.
