Where sokujo-moto was born — a cultural-property kura on the Ozumi spring.
Ofuku Shuzo, founded in 1897 in Nagaoka, holds a singular place in sake history: its founder Goro Kishi developed the sokujo-moto quick starter that most breweries in Japan now use. The house brews with the clear natural spring Ozumi and select rice in the Echigo toji tradition, inside buildings registered as National Tangible Cultural Properties. Tours run year-round by reservation on weekdays.
