Shirataki Shuzo began in 1855 serving travellers on the Mikuni highway at Echigo-Yuzawa. Its flagship borrows Lao Tzu's words — jozen mizu no gotoshi, the highest good is like water — and the sake lives up to it: clear, light and easy, brewed on Yuzawa snowmelt. The kura stands four minutes' walk from JR Echigo-Yuzawa station, with a direct shop.
