The brewery that first aged sake inside the snow, five metres down in Ojiya's drifts.
Based in Ojiya, Niigata, and established in 1955, Takanoi is known as the brewery where setchu chozo — ageing sake within the snow — began. Turning the burden of one of Japan's heaviest snowfalls into a method, it matures sake for about a hundred days inside a five-metre snow mound, where the temperature holds at 0°C and humidity at 100%.
