A domaine brewery in the Nechi Valley that grows its own rice and channels the valley's terroir into every bottle.
Founded in 1868 in Itoigawa, on Niigata's mountainous coast, Watanabe Shuzoten calls itself a domaine kura: staff here don't just brew sake, they grow the rice for it, in the narrow Nechi Valley that gives the brewery its name. The house works with Niigata's own rice varieties, Gohyakumangoku and Koshitanrei, carrying the valley's soil and water — its terroir — directly into the glass. It's a rare model in Japanese sake, closer to a French wine domaine than a typical kura, and one the brewery has pursued as a pioneer among its peers.
